Easy, Delicious, DAIRY-FREE Coffee Creamer

I’m addicted to coffee creamer and it’s a real problem.
There’s a whole aisle for people like me. It’s just jug after gorgeous-colored, ridiculous-sized jug, tempting my taste buds with promises like “Italian Cream” and “Caramel Drizzle” and “Vanilla Bean”. In a single week, I can take down one of those 32-ounce jugs of goodness. No problem.
But then I started having stomach aches.
And headaches.
And just feeling… blah.
I facetimed this nutritionist for a consult and told her about all of these unfortunate issues, and the wisdom she dropped on me was this: “You know, you should cut out dairy for a little while. Just see how you feel.”
So I did. And now I hate her. Because she was right, and I feel great, but now I can no longer heft a gallon-sized jug of sweet coffee caresses into my cart at the grocery store every week.

So, of course, I had to make an alternative. And honestly… it’s pretty good. It’s a simple base, so you can make a ton of different flavors, it’s cheap, it’s easy, and it’s almost as creamy as the real thing.
Let’s do this dairy-free thing.
Insanely Easy Dairy-Free Coffee Creamer
Ingredients:
One can of coconut milk (or coconut cream for thicker texture)
Equal amount of other non-dairy milk (I like oat or almond)
2 tablespoons honey (or other sweetener: I’ve also used a brown sugar simple syrup)
Flavor-bringers (go wild: almond extract, caramel syrup, cocoa powder, marshmallow whip, salt, you name it)
Pour equal amounts of coconut milk/cream and other non-dairy milk into your blender.
Grab your honey and throw it on top.
Measure out, or eyeball, your fun flavoring into the blender.
Blend until everyone’s having a good time.
Viola! Store in mason jars or other air-tight receptacles in your fridge for up to a week and a half.
Bonus: Amanda’s favorite flavors
Simple but sweet (this is my every-day go-to!): use local orange-blossom honey, a splash of almond extract, and a tablespoon of caramel syrup
Chocolate-covered cherry: 2 tablespoons of cocoa powder and a splash of almond extract
Mint mocha: 2 tablespoons of cocoa powder and a splash of peppermint extract
Peanut butter cup: blend in a tablespoon of creamy peanut (or other nut) butter and two tablespoons of cocoa powder
Salted caramel: sub a brown sugar simple syrup (mix about a tablespoon of brown sugar with a tablespoon of hot water, stir until smooth and liquid) for honey, add a few grinds of kosher salt, blend with a tablespoon of caramel syrup
